BARACOA 1. SUGARCANE FARM ?? SUGARCANE JUICE: Chop the sugar cane and peel it with a machete. Clean the trapiche machine. Insert the sugar cane into the trapiche to smash and extract the juice. Put onion on the fish then pour the sauce on top. ??CRAB BACAN: Grate coconut, add shaved cambute (banana) and some shaved banana with achiote and mix. CUBAN LECHON: Season pig and stuff with rice and vegetables. Skewer pig and roast over fire for 6-8 hours, rotating continuously. ?? MORCILLA: In a bowl, mix the pig blood, add oregano, cilantro, garlic and salt together. Stuff the intestines with the pig blood mixture. Boil for 20 minutes and saute the pieces.
